Something is really nostalgic about making a fruit salad. It reminds me of New York in the summer time. My aunt and uncle always had it in their fridge. On a hot summer day, cold fruit is exactly what I need to cool down. My mom would add it to our cooler during softball tournaments as well.

Fun fact, Cassidy loves fruit. What I love the most about this recipe is that it’s totally customizable. You choose all of your favorite fruits and add them to the mix. Just make sure that you dry the fruit very well after washing. You don’t want the fruit to get her soggy. With that said, I would most likely ditch bananas and oranges.

Now, let’s move on to this simple summer recipe.

Choose the desired fruit for your salad.

I added:

  • 2 1/2 Pink Lady Apples
  • 16 oz pineapple chunks
  • 1 container of raspberries
  • 10 medium strawberries
  • 1 cup of red seedless table grapes

I cut all of these up into bite size pieces. Once they were all added to the bowl, I took one packet of Sugar Free Fat Free cheesecake flavored jello pudding mix and sprinkled it over top. I know it sounds weird, but push through. When choosing a bowl for this make sure it has a lid, so that you can shake it well after adding the pudding mix. After shaking well, put it in the freezer for 3-4 hours.

After waiting the 3-4 hours, you can serve yourself! You will notice that the juices from the fruit have mixed with the jello pudding, adding a tasty coating to the fruit. I love adding non dairy whipped cream to mine.

As someone with an insane sweet tooth, I can say that this is a perfect replacement for ice cream. This cheesecake fruit salad is really versatile. It can be a snack by the pool, dessert, part of your lunch – it just works. Also get creative and add whipped cream, granola or your favorite toppings.
